- 500 g fixed potatoes
- 1/2 onion
- 3 tablespoons sunflower oil
- Salt and pepper

Preparation:
Potatoes in a saucepan with enough water approx. Cook for 20 minutes. Peel the onion and cut into cubes.
Heat 2 tablespoons of oil in a pan and simmer the onion until glassy. Drain potatoes, chill cold, peel and cut into small pieces. Add the potatoes to the onions in the pan and fry for 10 to 15 minutes until golden brown.
Season with salt and pepper.
In a second pan, heat 1 tbsp of oil, beat eggs one after the other
and add to the pan next to each other. Fry over medium heat for 2 to 3
minutes.
Season with salt and pepper. Gently remove the fried eggs from the pan and add to the roast potatoes. Let it stall for a short time.
